Ok, so I know it's been quite a few months, but my life has been INSANE! But now I'm in a umique and somewhat difficult situation for a THMer. Myself and my family are now living with another family due to circumstances, and none of them do THM, and there's about ten of us in all...that's a lot of people! Trim Healthy Momma can sometimes be a little more expensive than a normal diet, so it's just my mom and I, so now I'm going to share with you all this journey my loving God has put us in. :)
So for the past months, I haven't been faithful to THM, but now I've decided to go back at it!Lately it's been a little challenging, and I've had to get pretty creative with trying to stay good...but it's been a huge challenge. Most of the meals that are prepared by someone other than me, can not be modified to me Trim Healthy Momma friendly. :/ But I'm persevering, because I don't wan to give up just because it's hard! If our Lord, Jesus Christ, had done that, we would all be condemned to hell.

So let's talk about some things I've come to love to eat for meals lately! :) For breakfast, ive come to be best buds with the blender, we've gotten pretty close! So a pretty typical breakfast is smoothies, which are surprisingly good! Due to the circumstances, I will be unable to get too creative with my flavors, and meals in general. oh well! Hmm, for lunch, I mostly eat quesadillas, and every time i make one, I'm reminded of a seen in this amazingly cheesy movie: "Napoleon Dynamite".   But back to my food...I love quesadillas, they're fast, cheap, and taste fabulous! hehe I've found that if you use a low carb wrap, grilled chicken, cheese, sour cream, and salsa you've got yourself an amazing meal. Every once in a while though, I'll mix it up and make it with taco meat, sour cream (or ranch!) and cheese. mmm so good! Usually, the type of meat we use for taco meat, is ground turkey from Costco. So basically those two things, are the main things I'll eat for breakfast and lunch.
So lately, I've come to be close friends with our coffee pot as well, I'll usually drink a cup in the morning. Sooo good! But if you're like me before THM, you like a little coffee with your cream and sugar. lol! So I put a lot of sugar in, but with THM, i can't...so i had to find a solution! Stevia Sweet Drops were pretty good, but they're sooo expensive! Well, one day i was as Miejer, my mom and i saw this sweetener called "Skinnygirl liquid sweetener"...It's not only cheaper, but WAY better (in my coffee drinking opinion). It cuts back on the bitterness, and is way sweeter in general. This is planned proved, it's basically a stevia extract.  Even though it seems scary, not doing sugar is actually a very good opportunity to strengthen your self denial. So we CAN do this THMers! It's such an amazing goal we're heading towards, who doesn't want to feel healthy?!?! So let's do this thing!

This past week, I've been making dinner for my family every night. Thursday night, I made this AMAZING crock-pot meal. It was a Chicken Tomato Soup. I started it at about ten-ish in the morning, I didn't think the chicken would be cooked by the time the rest of my family were crying for dinner, ;) but it was! So if you're paranoid it's too full and the chicken wont be done in time, it will. This recipe is most definitely a "keeper". Personally, I don't think it needs any tweaking for us, but you can most certainly add and take things away to make it exactly what you want! That's the amazing thing about cooking! :) So without further delay, I give you the highlight of the week's dinners so far:

   

"Creamy" Crockpot Chicken and Tomato Soup

This recipe makes a whole bunch! So keep that in mind. This spectacular dinner is so incredibly easy, it's almost humorous. All you need to do (if they were previously frozen) is thaw your chicken breasts. This recipe is a very heavy "S" meal if you are a THM-er. I hope you enjoy this as much as my family did!

"Creamy" Crockpot Chicken and Tomato Soup

8 frozen skinless boneless chicken breast
2 tablespoons Italian Seasoning
1 tablespoon dried basil
2 cloves garlic, minced
1 large onion, chopped
2 14 oz. can of coconut milk (full fat), shake before opening can to avoid separation
2 14 oz. can diced tomatoes and juice
2 cups of chicken broth
1 small can of tomato paste
1/2 jar of your favorite tomato sauce
Sea Salt and pepper to taste
Put all the above ingredients into the crock-pot, cook for 9 hours on low. After 9 hours take two forks and shred the chicken, set the crock-pot on warm till ready to serve (making sure to taste it before serving to make sure there is enough salt and pepper)

Okay, so this is my first blog...so you guys are going to have to bear with me.
So I guess I'll start off by talking about why I decided to make a blog. I've always liked the idea, I just never had anything I could blog about. Lately though, my mom and I started to do the Trim Healthy Mamma life style (I don't particularly like the word "diet", it seems too negative), and I thought that it would be cool to share the recipes we try with other. I've always enjoyed cooking, so I'm pretty excited about this! So I hope you all benefit from this blog, and are able to find some helpful and tasty recipes to try for yourselves. :)
Another thing I hope you guys will benefit from on this blog, is that I will be putting down what I have been and am studying in my Bible. I hope this will encourage you to do the same and that it will help myself to be more dedicated to studying my Bible. We are told to hide God's word in our hearts, so we don't sin against Him (Psalm 119:11).
Those two are going to be the main things I blog about for a while, at least until I start to crochet and sew! Once I start learning those two things, I'm sure you guys will be sick of hearing about them. I'm very excited to be learning how to and can't wait to share it with everyone. Another thing you'll be seeing throughout my blogging, is my beloved puppy dogs. I have three, they're all golden retrievers; the first and oldest one is named Lucy, the second is Clover, and the third is Alice. I know some of you think we're completely insane to have three medium sized dogs in one house; in fact, I thought we had gone insane when we got Clover and Alice two winters ago lol! Rest assured, my family (including myself) are completely sane, we just have a great love for dogs. I will try to put a picture of each up as soon as I can. :)
So I hope you all enjoy this blog and are able to glean some good recipes from it. I will try to get up a few recipes ASAP.
